Recently, Department of Culture, Radio, Television and Tourism of Zhejiang released “The List of Food Experience Restaurants 2024” with the theme of “Delicious Foods of Zhejiang”, and Haiyan’s Victory Restaurant (at Beida Street) and Firewood Restaurant were included. In order to promote the high-quality development of Zhejiang’s food culture and tourism industries, 10 departments of Zhejiang such as Department of Culture, Radio, Television and Tourism issued “Implementation Proposals on Upgrading ‘Delicious Foods of Zhejiang’ Project (2024-2026)” in May 2024, according to which, by 2026, Zhejiang will identify 1,000 food experience restaurants, 50 flagship restaurants and 30 food blocks (towns), etc., and implement special projects on cultural prosperity, consumption, brand and quality improvement and talent-driven development to make the “Delicious Foods of Zhejiang” more valuable, appealing, influential and impressive, build a famous food culture province and the best food tourism destination in China, and create the fashionable brand “Discover Zhejiang via Food”. “Waiter, a plate of fried pork liver, and 100 grams of Shaoxing Wine, please. In 2023, the second Victory Restaurant opened at Beida Street in Wuyuan, which is five times larger than that in Shendang, and can serve 240 guests simultaneously. The decoration style and food design of the second Victory Restaurant restore the original scene described by Yu Hua, fully showing the restaurant style of the 1960s and 1970s. This restaurant mainly supplies local dishes, but its dishes are more various than those of the Restaurant in Shendang. During holidays, the Restaurant will hire more staff, prepare more foods and extend business hours to respond to the increasing passengers. It has a professional chef team and strict quality control measures with its food ingredients being fresh and dishes being stir-fried, steamed, roasted on the spot. As one of the restaurants promoting “Delicious Foods of Zhejiang” project, it is committed to serving each consumer with local delicacies. With an area of 600 square meters and 12 private rooms, Firewood Restaurant is located in the South Gate Square Park and can serve nearly 300 guests at the same time. The consumers can enjoy delicacies, relax themselves and experience unique atmosphere here for its elegant and serene environment. This restaurant began to operate in 2019. “Firewood” in Chinese is integrated as “when everyone adds firewood, the flame will rise high”, so the name indicates if everyone works hard, greater progress will be made, says Lyu Gang, boss of the Restaurant. “Firewood” also means “good food ingredients” since it reads like Chinese character “shichai”, meaning good food ingredients, so the Restaurant follows the philosophy of “cooking good dishes with good food ingredients”. As a restaurant providing various dishes, it combines a variety of cooking styles and dishes based on local cuisines to satisfy customers’ tastes and bring fresh experiences to them. “For example, we have upgraded locally famous specialties like braised mutton, roasted potatoes with fried meat, fish cooked with vinegar, and braised pork balls in gravy, which are all our signature dishes and loved by diners,” said Lyu Gang. In recent years, Haiyan has organized catering enterprises to participate in the selection of special dishes, food promotion, establishing food experience restaurants to promote the integrated development of food, culture and tourism.
