Recently the sixth list of the representative projects of the intangible cultural heritages of Zhejiang was announced, and the production technique of Shendang’ Shaoxing Wine was included into this list. Up to now, Haiyan’s intangible cultural heritage projects at the provincial level total eight.

With a history of more than 130 years and 18 unique production processes, Shendang’s Shaoxing Wine production is a typical representative of the fermenting technique of the Shaoxing Wine production of Jiangsu and Zhejiang. Strong in bouquet, Shendang’s Shaoxing Wine integrates the components of alcohols, aldehyde, acids and esters as well as sweet, sour, fresh and astringent smells, and abounds in 21 kinds of elements like amino acids, polyphenols and peptides.

Now in Haiyan there is one national, eight provincial and 49 municipal intangible cultural heritage projects, 11 provincial, 35 municipal and 83 county-level representative inheritors of the intangible cultural heritages.
